Growing up, when a rack of lamb was on the table, it almost always meant that we were celebrating something. Birthdays, holidays, graduations, you name it, this dish made an appearance. For a recipe that takes hardly any work, it tastes luxurious and makes any dinner feel fancy and special (at least until everyone starts eating with their hands right off the bone!). It’s best served medium rare and paired with any roasted vegetable or sautéed green. Oh, and don’t forget the mint jelly!
