Veggie-Heavy Turkey Burgers

Functional Foods Highlight

An equally as flavorful yet more nutritious version of the summer classic! This recipe is great because you can completely make it your own and use what you already have in the fridge. I used raw kale, zucchini and carrots in this recipe but leftover cooked veggies from the night before also work great. The mayonnaise and Worcestershire Sauce add great flavor and keep the burgers nice and juicy. Try this recipe as is or use this as a baseline and experiment with different vegetables and seasoning. Top with your favorite condiments and enjoy!

Food Farmacy

  • 2 lbs organic ground turkey
  • 3 cups chopped/ shredded vegetables (I used kale, carrots and zucchini)
  • 2 cloves garlic, minced
  • 2 Tbl good quality mayonnaise
  • 1 Tbl Worcestershire Sauce
  • 1 tsp salt

Directions

1. In a large bowl mix together mayonnaise, Worcestershire Sauce and salt   

2. Add ground turkey, chopped vegetables and minced garlic to bowl and gently mix until combined 

3. Form turkey-veggie mixture into 8 equal sized patties; chill on a lined baking sheet until ready to use 

4. Place patties on an oiled grill (medium/ high heat) and cook, covered, for 5 minutes on each side (or until internal temperature reaches 165 ºF)

Don’t have access to a grill? No problem! You can cook these burgers on your stove top in a skillet over medium/high heat for 5 minutes per side!

This recipe is a great way to add more vegetables to your diet. Add leftover grilled patties to your favorite salad for the perfect lunch!
