Brain Boosting Blueberry Vanilla Almond Muffins

A 3-ingredient dessert that is so healthy you can eat it for breakfast!
1. Preheat oven to 400 °F
2. Slice vanilla bean lengthwise and scrape out seeds; combine seeds with honey
3. Cut each of the nectarines in-half (creating 6 halves) and remove the pits, in a lined baking dish place each half cut side up
4. Drizzle vanilla honey on top of the nectarines (about ½ Tbl. per nectarine half)
5. Bake for 20-25 minutes until cooked through
6. Serve warm with your favorite yogurt, ice cream or whipped cream and top with toasted nuts
This dish works well with all types of stone fruit; switch out the nectarines for peaches or plums if you prefer! Also, don’t throw away that scraped vanilla bean pod. You can throw it in your jar of sugar (or honey) to infuse it and have a large batch on hand.
Pairing these nectarines with some Greek yogurt and nuts makes this a delicious and nutritious breakfast, snack or dessert filled with fiber, vitamins and protein.
