There is something really special about certain fruits when you add salt to them. This is absolutely the case with watermelon and tomatoes and why this salad is so delicious! Instead of using chunks of feta in this salad we've turned it into a creamy spread, making this recipe a more elevated version of the summer classic we all know and love.

Food Farmacy

  • 4 cups watermelon, cut into roughly 1/2 inch cubes
  • 2 medium/ large heirloom tomatoes, cut into roughly 1/2 inch pieces
  • 2 Tbl. good extra virgin olive oil
  • 1 Tbl. red wine vinegar
  • 1 small shallot, sliced
  • salt + pepper
  • 8oz. greek yogurt (no sugar added)
  • 80z. feta cheese
  • fresh mint (for garnish)

Directions

For the Salad

  1. Combine tomatoes, watermelon and shallots into a large bowl
  2. Drizzle with olive oil and vinegar and season with salt and pepper
  3. Gently toss and set aside while preparing feta spread

For the Whipped Feta

  1. Using a food processor (or by hand) mix together yogurt and feta until smooth

To plate:

  1. Spread whipped feta on the bottom of your dish
  2. Top with Tomato & Watermelon Salad
  3. Finish with a handful of fresh mint

I recommend enjoying this salad soon after making it! If you have leftovers store in an airtight container in the fridge to have the next day!

Also, for those who find feta too salty, you can substitute it with goat cheese for a more mild flavor!

Add more nutrients to this dish by adding in some leafy greens. Spinach, arugula and even kale make great additions to this recipe!
