Functional Foods Highlight

When you are cooking with a really good quality ingredient, you'll find that you won't need extra flavors or 'fluff'. This recipe is the perfect example of that! Typically, I would use jumbo lump crab when making crab cakes but since we are Up North this summer I am using fresh Maine crabmeat  for this recipe. I try and use local ingredients as much as possible; not only do I find the quality and taste better, but it's important to support local farmers, fisheries and businesses... now more than ever!

What I love the most about this recipe is that you can really taste the crab meat. There's very little filler and added flavors that tend to overpower a lot of crab cakes we find in restaurants and grocery stores today. The result is a light and delicate cake that tastes just like crab!

Food Farmacy

  • 1 lb. fresh crab meat
  • 1/4 cup mayonnaise
  • 1 Tbl. dijon mustard
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 1 Tbl. fresh parsley, chopped
  • 1/2 lemon, juice
  • 1/4 tsp. salt
  • Optional: 2 Tbl. butter (melted)

Directions

1. Preheat oven to 450℉

2. In a large bowl mix together mayonnaise, dijon mustard, lemon juice, egg and salt 

3. Add crabmeat, panko breadcrumbs and parsley into mixture and gently fold until combined 

4. Refrigerate mixture for at least 30 minutes

5. Using a ½ cup measuring cup, scoop out 6 crab cakes onto a greased or lined baking sheet. Gently compact (not flatten) with your hands to keep cakes together while cooking. Optional: For a little extra flavor, drizzle each crab cake with melted butter before baking

6. Bake for about 15 minutes or until nicely browned 

7. Serve with lemon wedges

Crab cakes are a great thing to have on hand! Once baked and cooled, wrap cakes individually and freeze for up to 3 months. When ready to use, bake frozen at 350 °F for about 30 minutes.
