Honey Soy Chicken Lettuce Wraps

These Lettuce Wraps are the perfect healthy lunch or dinner. The marinade is sweet and salty and the kimchi adds the perfect amount of spice. This dish is super flavorful and the recipe can easily be altered to your preference of protein and toppings!    

Food Farmacy

  • 2 chicken breasts (skinless & boneless)
  • Full leaves of lettuce (Boston Bib, Green Leaf, etc)
  • 2 cloves garlic
  • 1 tsp. grated ginger root
  • 2 Tbl. soy sauce
  • 1 Tbl. good quality honey
  • Avocado (sliced)
  • Kimchi
  • Olive Oil (for cooking)

Directions

1. Add soy sauce and honey to a medium size bowl, using a microplane, grate ginger and garlic into marinade and whisk everything until combined

2. Cut up chicken into even bite size pieces, about 1 inch cubes, and add into marinade

3. Cover and marinade for at least 1 hour

4. Once chicken is marinated, drizzle olive oil onto a pan over medium/ high heat

5. Add chicken and stir occasionally. Cook until done, about 7-10 minutes (do in multiple batches if necessary, to not overcrowd chicken)

6. When ready to serve, add a spoonful of chicken to each lettuce wrap and top with sliced avocado and kimchi

This dish can be made with any type of protein. If you are looking to use fish instead of chicken, be sure to marinate your fish no longer than 20 minutes. If you are a vegetarian, tofu is an excellent substitute!

Add more nutrients into your dish by adding dark leafy greens, like kale or spinach. You can add them raw as a topping or while cooking your protein.
