Brain Boosting Blueberry Vanilla Almond Muffins

Oranges: Oranges contain fiber, supporting in digestive function and gut health. They are hydrating, with 1 medium size orange containing about 1/2 cup of water. They are high in vitamin C, supporting our immune function.
Move over margarita mix, tequila deserves better! Instead of pairing tequila with overly sweetened, sugar based mixes, try using fresh juice from grilled oranges and limes. As soon as the citrus hits the grill, you can literally smell how good this drink is going to taste. The caramelization adds the perfect amount of sweetness to this no-sugar-added, five ingredient cocktail!
1. Heat grill (or grill pan) to medium/ high
2. Slice orange and limes into 1/4 inch thick wheels and grill until lightly charred and caramelized, about 2 minutes per side
3. In a cocktail shaker, combine grilled citrus and a large handful of mint; muddle together thoroughly
4. Add ice and 2 oz. of tequila
5. Shake shake shake
6. Pour mixture into 2 glasses over ice. Top with a splash of seltzer

Play around with the type of citrus you want to use. Clementines, lemon and grapefruit would be a great alternative in this drink!
If you want to give yourself an extra boost of polyphenols, grate some orange peel into your drink, it will give you extra flavor and extra health benefits!
