Chilled Sesame Cucumber Salad

This is a super easy and simple recipe; I'm talking only-three-ingredients simple. It's great for a quick afternoon snack or  the perfect refreshing summer side!

This is obviously a very basic recipe, but it is a great starting point, or baseline, to get more creative. If you are looking for something more substantial or interesting try adding your favorite fresh herbs, chillies or other raw vegetables to the mix. I always encourage you to make these recipes your own!

   

Food Farmacy

  • 4-5 Persian cucumbers (or 2 English cucumbers)
  • 1 Tbl soy sauce
  • 1 Tbl sesame oil
  • Optional: Toasted sesame seeds

Directions

  1. Leaving the skin on, cut cucumbers into even slices (I did about 1/2 inch thick for this recipe)
  2. In a medium bowl, add cucumbers, soy sauce and sesame oil and gently mix until cucumbers are evenly coated
  3. Cover and chill in the refrigerator for at least 15 minutes
  4. Mix again before serving and top with toasted sesame seeds

For those who are sensitive to soy or have a soy allergy, substitute the soy sauce with coconut aminos.
