Brain Boosting Blueberry Vanilla Almond Muffins

This recipe is super fast and easy and makes the perfect quick breakfast or delicious afternoon snack. These muffins are filled with brain boosting ingredients like blueberries, nuts, and coconut oil. They’ll also keep you full, due to their high fiber content. The problem is eating only one...cause they’re just that good!

Food Farmacy

  • 1 cup blueberries
  • 3 tablespoons chia seeds or ground flaxseeds
  • 1.5 cup almond meal/flour (can also use a nut flour blend)
  • 1/2 cup nut butter, like walnut, cashew or almond butter
  • 1/3 cup maple syrup
  • 2 eggs
  • 2 tablespoons melted coconut oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 2 teaspoon vanilla

Directions

  • Preheat oven to 350 degrees
  • Blend blueberries in blender until pureed and stir in the chia seeds. Let this sit while you prep the rest of recipe (or let sit for 5-10 min until a jam like consistency has formed)
  • Line muffin tray with liners or rub with coconut oil
  • Add the rest of the ingredients to the blueberries and chia seeds in blender
  • Blend together until smooth
  • Pour mixture into muffin tin and bake for 25-30 minutes or until knife comes out clean
  • Enjoy!

To make these muffins taste even more indulgent, add an extra teaspoon of almond extract! It works perfectly with blueberries!
